Sweet somethings part II: Vanilla cupcakes with heavenly meringue icing

(makes 10) A garden or carnival-themed wedding is the ideal setting for these beautifully-bedecked babies. The demure vanilla cupcakes are the perfect partner to the over-the-top meringue crown, the soft-crumb texture of the former providing the ultimate bed for the dreamy softness of the latter. It’s the stuff that wedding dreams are made of.

Ingredients: Cupcakes

  • 125g softened butter
  • 150g castor sugar
  • 150g self-raising flour
  • 2 large free-range eggs
  • 2,5ml vanilla extract
  • 100ml milk

Icing

  • 4 extra-large free-range egg whites
  • 250ml sugar
  • 1,25ml cream of tartar
  • 2,5ml vanilla extract

Method: Cupcakes

  1. Preheat the oven to 200°C
  2. Line muffin pan with paper cases of your choice
  3. Place all cupcake ingredients apart from the milk into the bowl of a food processor
  4. Mix until only just combined
  5. Gradually add the milk while pulsing
  6. Divide batter between the ten paper cases, then bake for 15-20 minutes or until lightly golden
  7. Place on a cake rack, then ice when completely cool

Icing

  1. Place egg whites, sugar and cream of tartar in a heatproof bowl over a saucepan of gently simmering water
  2. Whisk for approximately 3 minutes, or until the sugar has dissolved and the egg whites are warm
  3. Transfer eggs to the bowl of an electric mixer then whisk for around 6 minutes, first on low then high, until stiff
  4. Stir in vanilla extract
  5. Place in piping bag and swirl dramatic mounds of frosting atop the cooled cupcakes

Variations: Add sparkle with edible glitter in the colours of your theme, or singe with a kitchen blowtorch for added effect. Golden rule: Pipe icing immediately.
